Lone Star Battered Chicken Fried Dove Diablo
Makes 12
- 3 cups peanut oil
- 12 dove breasts, deboned
- 1/2 cup club soda
- 1/4 cup Lone Star beer
- 1/2 cup flour plus ¼ cup flour for dusting
- 2 tablespoons Tabasco or to taste
- Kosher salt to taste
Heat oil in deep-sided heavy skillet or deep fryer to 375 degrees. In bowl, combine club soda, beer, flour, and Tabasco until well combined to almost the consistency of pancake batter. (If mixture is too thick, thin with club soda; if too thin, thicken with flour.) Set aside. In separate bowl, roll each Dove breast in remaining flour, then dip dove breast into beer batter, letting excess batter drip off. Gently place each dove breast into hot oil and cook for 2-3 minutes, then turn and cook for an additional 2-3 minutes or until golden brown. Remove. Season with salt and strain on paper towel-lined plate. Serve warm.
